An easy Flapjack Recipe

Today, we made flapjacks! 

I didn't choose the best (healthiest!) recipe but I wanted something quick and - far more importantly - easy to make with E as I wasn't sure it would hold her attention today. Plus, I wasn't sure how long T would be settled for!

I can't remember where I found the recipe now but here you go:-

100g butter
25g caster sugar
4 tablespoons golden syrup
200g oats
150g dried fruit (we used sultanas and cherries)

We melted the butter and sugar in short, sharp bursts in the microwave. To that we added the golden syrup and stirred well.

We then added the oats and stirred well before putting in the microwave for 3 minutes. Once finished we added the dried fruit, stirring well. 

We popped the mixture into a large, flat pan and popped it into the fridge for a couple of hours to set.

Because this recipe was so easy, I was slightly (ok, very!) worried about how well the flapjacks would turn out but I'm pleased to report that they are delicious. E hasn't yet tried them but I'm sure she'll enjoy them (and if not, more for me!)
