Slimming World Friendly Chilli Con Carne

In an attempt to make more from meals from scratch, I recently made chilli con carne - We hadn't had it for ages and I suddenly fancied it! I found a recipe online ages ago which I jotted down and vaguely followed and I can't for the life of me remember where I found it - so my apologies for that!  Here's how I made it:

Large pack of beef mince
1 red pepper, 1 yellow pepper
1 onion
tin of kidney beans (except we had run out so I used black eyed beans instead - I don't think it really matters what beans you use though!!)
carton of passata
beef stock (2 Oxo cubes)
2 teaspoons paprika
2 teaspoons lazy chilli (more or less depending on your heat preference)
2 teaspoons lazy garlic
1 teaspoon cayenne pepper

This is such an easy dish to make - pretty much put everything in a pan and leave it to simmer for half an hour or so. 

- Cook off the mince.
- Add garlic, chilli, onion, peppers and beans. Cook for 5 minutes.
- Add the beef stock and passata, stirring well.
- Add the paprika and cayenne pepper.
- Make sure everything is stirred well. Turn down the heat and leave to simmer until you're ready to serve.

We drizzled with low fat natural yogurt and sprinkled on some low fat cheese and D had his with plain nachos and rice. Delicious! In fact, I enjoyed it so much that I've since made another big batch and portioned it up before popping in the freezer - get me, attempting to be organised! With the second attempt, I added black eyed beans as well as kidney beans as well as extra chilli to turn up the heat.

    I do so love passata, I use it a lot x
