In an effort to change my eating habits - ie to buy less ready made 'stuff' and make more myself, I've been spending time looking for easy, sweet recipes and came across no bake oat balls. (I've also seen them referred to as oat energy balls).
If you spend some time looking, there are tons of US recipes about, its just a case of finding the right one for you. After making these several times I've adapted the recipe to my taste and can confirm that not only do they taste delicious, they also keep in the fridge for a good week. Not only that but they are super easy to make too with no baking required. Win-win!
1 cup of oats
2/3 cup dessicated coconut
1/2 cup peanut butter (smooth or crunchy)
1/3 cup runny honey
1/2 cup mini chocolate chips
2 tbsp sunflower seeds
1 tsp vanilla
Add all of the ingredients to a large mixing bowl and combine.
Roll the mixture into small balls and place on a tray lined with greaseproof paper. Pop the tray into the fridge for 10 minutes for the balls to firm.
Transfer to a contained and keep in the fridge. Perfect mid-afternoon with a cup of tea for a sweet hit!
