The Easiest Chocolate Brownie Recipe

I'm not a natural baker. I never have been and don't think I ever will be but I do like to attempt it every now and again. And of course, the kids are always super excited to try and make cakes - and eat them (of course!) - so I don't want to disappoint them.

There are several different versions of this recipe available, all with minor changes to it.  I found it some time ago and have since tweaked it ever so slightly by adding a couple of small additions that seem to work well.  I should warn you, these are not at all healthy so I'll apologise in advance but they are very tasty and have gone down very well each time I've made them.  It is also the simplest recipe I think I have ever come across, taking just a few minutes to mix everything together and approximately 15 minutes in the oven.  


400g chocolate spread - I use hazelnut chocolate, Nutella or Tesco's own brand
2 eggs
1/2 cup of flour
Pinch of baking soda
Splash of milk
Optional - chocolate chips or chopped hazelnuts


Preheat the oven to 180.  

Lightly coat a pan with oil and cover with greaseproof paper.  The pan I use measures 27cm (L) x 22cm (W) x3cm (H), making the brownies quite thin but they are rather rich and sickly so it works well.  

In a large bowl combine the eggs, flour and baking soda before adding the chocolate spread. This will be hard to mix so I find a splash of milk at this point works wonders.  The mixture will be very smooth and it's now that you need to add the chocolate chips and/or hazelnuts before pouring into the pan and smoothing out with a spatula.  

Pop them into the oven for an initial 15 minutes before taking them out and checking with a toothpick to see if it comes out clean.  You may find it needs another couple of minutes but make sure to keep a close eye on it as if they are left for too long, they will dry out.   

Once the toothpick is clean, take them out and leave them to cool before cutting and serving. 

Best served with your feet up and a hot tea or coffee!  I hope you enjoy :)
