Meal Planning Monday

One of my goals for 2018 is to make more of an effort to meal plan.  This week's meals include three new recipes. I know, get me all adventurous with my cooking!  I like to try something new so that neither of us gets bored with what we're eating. And so, this is how our week in meals is looking:

Quick King Prawn Curry
Chickpea and chorizo stew
Thai style peanut and cauliflower rice
Fish and vegetable pesto parcels
Cajun style pork chops for D, shredded lamb for me

All of these will be served with plenty of vegetables to fill us up.  

I normally try to avoid cooking us different things on the whole but D brought the Cajun style pork chops a while ago as they were on offer and he loves pork.  They were far too spicy for me and as he doesn't like lamb, I thought I'd have that instead.  

Tonight's meal was the chickpea and chorizo stew and it was delicious.  D enjoyed it and said he would definitely eat it again. I don't know if you find this but that's the real test - did D enjoy it and would he eat it again!  I'm definitely adding this to my go-to recipe list and I plan on sharing the recipe soon!
