Chickpea & Chorizo Stew


Its not secret that I'm not a big fan of cooking. Partly, I think, because of the lack of space we have in our kitchen. With everything so cramped, its difficult to keep everything to hand so when I do cook, the easier it is to do, the better.  Recently I made a Chickpea and Chorizo Stew and, as easy cooking goes, this is up there!  

Google Chickpea and Chorizo Stew and you'll find hundreds of recipes. Some are literally just those main items and others add a number of other things to them.  I used a basic recipe that I found on Pinterest and added ingredients to it that suit our tastebuds, D particularly likes his hot and spicy food so we added some smoked paprika to the stew, which against the chorizo really added some warmth to it.



Ingredients

200g chorizo
1 tin chickpeas
1 tin butterbeans
500ml chicken stock
1 tin chopped tomatoes
salt and pepper to season
1 clove garlic
2 teaspoons of smoked paprika

Slice the chorizo into thin pieces before popping in the pan with a little olive oil and a clove of garlic. Cook for 2-3 minutes before adding all of the other ingredients.  Bring to the boil before reducing down to a low heat and leaving to cook for an hour and a half. The longer this is left to cook, the better as it allows the chorizo to soften and the flavours to soak through.  

D had his served with rice and I had mine with a side of potato and kale.  We cooked plenty so that I could have some for lunch at work and I can confirm it was even nicer the following day!  

Despite the simple recipe, this is a really tasty stew that is well worth a try. A work colleague made it, with enough for leftovers and raved about it. Do let me know if you try it and what you think of it.

  7. I'm not a fan of cooking either - it's just a faff haha! This wouldn't be y go too meal (not a fan of chickpeas or chorizo!) but it does look good on the plate! Thanks for hosting #twinklytuesday :)
