Meal Planning Monday

Meal planning each week is still a work in progress. Most of the time I'm on it but some weekends, Sunday night rolls around and I just don't want to do it! I don't know why, pure 'meh', I think!  

This week I gave myself a good old kick up the bottom, sat down and got on with it.  Here's how the week looks:

Chicken and potato with garlic and parmesan sauce, broccoli and kale

Chickpea and chorizo stew

Vegetable risotto

Hunters chicken with baby sweetcorn, peppers and potato wedges

Belly pork with colcannon, garlic mushrooms and courgettes

I'll be making sure that I make extra so that I can portion some of the meals off for my work lunches.
