Meal Planning Monday


One of my aims for 2019 is to properly meal plan.  And by properly, I mean planning at least 6 meals for the week with the remaining day being for takeway or whatever it is we might fancy.  It makes my life so much easier, especially when we throw work and various after school clubs in to the week. If I have to stop and think about it, it takes me ages to organise something and D will just procrastinate over what he wants to have.

It also gives me more direction when I do my food shop, otherwise I'm pretty much just guessing at what to buy and end up throwing a little bit of everything into the trolley and that's the quickest way of running up the bill!  

My attempts at being gluten free have somewhat fallen by the wayside, which is silly when I know I feel better from it, so now I'm working hard at getting back to it and the main thing I've found with eating gluten is that its all about being organised. So no more winging it with breakfast and work lunches or snacks and hoping for the best.  Yesterday morning, I made some gluten free granola. It was my first attempt and, as first attempts go, is really rather nice and can be kept for two weeks. It means I've got something to hand for the mornings I do want breakfast.  

Here's how our week ahead looks:

Chicken stirfry 
Fish Pie
Macaroni Cheese (gluten free version for me)
Wraps with breaded chicken (D) / Salmon and vegetable risotto (me)
Chilli Coconut Chicken with rice 
Pork loins with mashed potato and vegetables
